Gorton's #RealisticResolution Tilapia Lettuce Wraps + Giveaway

Gorton's sent me a package that included free product coupons, an insulated tote bag, The SparkPeople Cookbook, The Spark Book and the SparkPeople 28-Day Boot Camp Workout DVD. I was asked to make a dish using one of their many baked or grilled products. I decided to use the Simply Bake Tilapia.


This Tilapia is so incredibly easy to make. The fish comes already in an oven bag and ready to be cooked. The oven bags make sure that the fish cooks perfectly and they eliminate a dirty pan all at once! I decided to make Gorton's Tilapia Lettuce Wraps with my fish. 


Confession. I didn't use lettuce because my grocery store had a really bad selection and I was forced to buy cabbage. While this is still great with cabbage, I definitely recommend using lettuce instead. Therefore, I decided to keep lettuce in the title of the recipe. The pictures do feature cabbage. Moving on..

I decided to load my lettuce with a mixture of chopped peppers, onions and top it with the Tilapia. The Tilapia comes with a delicious sauce, so you don't have to add much flavor to whatever dish you are making. You could also add a little rice to the bottom of these cups if you want more sustenance, but it is not necessary. Here is the end result. 


These are extremely easy and very tasty. All you have to do is saute the peppers and onions and clean the lettuce while the fish is cooking. Then assemble everything. Voila. Serve it with a balsamic, tomato and mozzarella salad for a healthy, quick and delicious side. Tip: try to find a local olive oil/ balsamic vinegar shop that specializes in balsamic vinegar to add more flavor. I used a strawberry balsamic from a local St. Petersburg, FL shop (Kalamazoo). SO good.
